How Do Subscriptions Work?

This maple bacon is exclusively made for Local Roots by Jacuterie, an artisanal charcuterie company based in Hudson Valley, NY. It's made using time-tested traditional methods and locally-sourced ingredients sourced from small, family farms. Crisp it up for breakfast or wrap them around your veggies as a sweet and salty treat.

    • Ingredients: pork, maple syrup, salt, celery powder
    • Your item will be ready the week after your order is placed. If you are a Local Roots member, this item will be included in next week’s regular weekly harvest. Of course, the exact day will depend on your regular Local Roots market or delivery day. You will also receive a confirmation email specifying the date of pickup or delivery after purchase.

The Problem

One indicator of the shady nature of the pork industry is the difficulty for consumers to find out just exactly how their sausage was made. In large part, this is a result of “ag-gag” laws: laws that prevent film or photography inside factory farms without the owner’s consent. This lack of accountability among conventional farmers has huge negative impacts on marketplace transparency, environmental protection, food safety, and animal welfare.
