Zucchini and Kale Pizza


  • 1 cauliflower pizza crust (I like to use pre-made)
  • 1/2 cup red pesto
  • 1/4 cup green onions, sliced
  • 1 cup curly kale, washed and lightly sauteed
  • 1 small zucchini, thinly sliced
  • 1/4 cup crumbled sharp cheddar cheese
  • Pecorino cheese for topping

To Make:

  • Preheat oven to 350 degrees F and line a baking sheet. 
  • In a small skillet, heat green onions in olive oil and once it's sizzling, add in 1/2 cup of red pesto and mix together. Keep stirring everything until green onions have cooked down. Spoon red pesto and green onion sauce onto cauliflower pizza crust (I use pre-cooked pizza crust).
  • In a separate skillet, saute kale in olive oil and salt until it turns green, but doesn't get too cooked. 
  • Top pizza with crumbled cheddar cheese, kale, zucchini, and spices of your choice. Bake in the oven for 20 minutes until cheese has melted and vegetables have cooked.
  • Remove from the oven and add fresh sliced green onion (If you want), shaved pecorino cheese, and enjoy!
