1 cauliflower pizza crust (I like to use pre-made)
1/2 cup red pesto
1/4 cup green onions, sliced
1 cup curly kale, washed and lightly sauteed
1 small zucchini, thinly sliced
1/4 cup crumbled sharp cheddar cheese
Pecorino cheese for topping
To Make:
Preheat oven to 350 degrees F and line a baking sheet.
In a small skillet, heat green onions in olive oil and once it's sizzling, add in 1/2 cup of red pesto and mix together. Keep stirring everything until green onions have cooked down. Spoon red pesto and green onion sauce onto cauliflower pizza crust (I use pre-cooked pizza crust).
In a separate skillet, saute kale in olive oil and salt until it turns green, but doesn't get too cooked.
Top pizza with crumbled cheddar cheese, kale, zucchini, and spices of your choice. Bake in the oven for 20 minutes until cheese has melted and vegetables have cooked.
Remove from the oven and add fresh sliced green onion (If you want), shaved pecorino cheese, and enjoy!
