Kohlrabi and Apple Slaw on Vegan BBQ Sandwich

A simple vinegar-based slaw with a hint of sweetness from the apple, this kohlrabi slaw will brighten up any dish. We’ve paired it with a vegan BBQ sandwich and used jackfruit as the base. The slaw could add crunch and brightness to tacos or be a great side to fried chicken or tofu as well.

Ingredients

1 bunch Local Roots kohlrabi
1 Local Roots apple
⅛ cup Local Roots apple cider vinegar
1 tsp salt
½ tsp sugar
10 oz jackfruit 
¼ cup bbq sauce
2 burger buns

 

Directions 

  1. Wash the kohlrabi and apple. Remove the tops from the kohlrabi, then peel the kohlrabi until the green falls away and you reach the white inside. Slice the kohlrabi into thin matchsticks. Cut the apple into thin slices.
  2. Mix the kohlrabi, apple, apple cider vinegar, salt, and sugar together. Allow to marinate for a few minutes.
  3. Cook the jackfruit according to package instructions, then mix in the bbq sauce.
  4. Toast the brioche buns, then spread the BBQ jackfruit on and top with the kohlrabi and apple slaw. Enjoy!
