Turkey Bacon Wedge Salad

Serves 4

Ingredients:
1 head iceberg lettuce, quartered
4 slices turkey bacon
1 tablespoon vegetable oil
2 hard boiled eggs, peeled then chopped roughly
2 tablespoons sliced almonds
Blue cheese dressing (recipe follows)

Directions:
1. Preheat the oven to 400 degrees F.
2. Separate the turkey bacon slices and lay out in a single layer on a baking sheet. Drizzle the vegetable oil over the slices.
3. Bake the bacon for 10 to 15 minutes until crisp and no longer limp when you lift them with tongs.
4. Remove the bacon from the oven and let cool for 5 to 10 minutes.
5. Chop the turkey bacon into small pieces.
6. To assemble the salad, place a wedge of lettuce on 4 plates. Dollop a two spoonfuls of dressing over the lettuce. Sprinkle the egg, almonds, and turkey bacon over each salad.

Blue cheese dressing

Ingredients:
4oz gorgonzola or any blue cheese, crumbled
6 tablespoon heavy cream
1 teaspoon pepper


Directions:

1. Mix together ingredients to form a chunky dressing. Let sit for 10 minutes to thicken
