The condiment you never knew you needed but once you make a batch, you’ll never go without. Sweet, savory and simple, this fennel jam is the perfect accompaniment to anything. From toasted bread to bases for soup, you’ll find yourself adding it to everything.
Ingredients:
1 bulb of Local Roots fennel, sliced with the core removed
2 yellow onions, sliced
4 cloves garlic, chopped
¼ cup olive oil
¼-½ cup orange juice
1 tablespoon fennel seeds
Salt and pepper to taste
Directions:
In a large pot, add olive oil and fennel seeds and warm on medium heat. When seeds are fragrant, stir in garlic, onions, and fennel. Cover with a lid for 8-10 minutes to allow color to develop. Deglaze the brown bits from the bottom of the pot with 2 tablespoons of orange juice. Lower the temperature to low and allow onions and fennel to soften for about an hour. Continue to check and deglaze with orange juice until onions and fennel have created a jam like texture.
