Summer Squash with Tahini-Sumac Sauce

Ingredients

  • 2 zucchini/summer squash
  • 1 clove garlic, grated or minced 
  • 3 tablespoons tahini
  • 3 tablespoons olive oil 
  • Salt and pepper to taste
  • 1/2 teaspoon sumac 
  • 3 tablespoons lemon juice
Method
  1. Cut the zucchini into 1 inch pieces. 
  2. Toss with salt, place in a strainer over a bowl, and set aside for 10 minutes. 
  3. Preheat oven to 375 F. 
  4. After 10 minutes, pat the zucchini dry. 
  5. Place on a baking tray, and toss with 1 tablespoon olive oil. 
  6. Roast in the oven for 20 minutes. 
  7. Broil for 1-3 minutes, until slightly charred and crisp.
  8. To make the sauce, combine garlic, tahini, lemon juice, salt, pepper, and sumac in a small bowl and whisk to combine. 
  9. Slowly stream in the olive oil while whisking. 
  10. Plate the sauce on the bottom of a dish, and the crisp zucchini on top, and garnish with fresh black pepper and black sesame seeds.
