Stovetop Sweet Potato Rice

A homestyle way to make rice, this recipe helps you achieve great steamed rice on the stovetop. Topped with cubes of sweet potato that are a nutritious addition that naturally sweetens the rice, this is a favorite way for children and adults to enjoy rice.

 

Ingredients

2 cups white rice
1 large Local Roots sweet potato

 

 

Directions

  1. Rinse the two cups of rice at least three times until the water runs nearly clear. In the pot of your choice, add the rinsed rice and then place your index finger into the rice until the tip of your finger touches the bottom of the pot. Fill the pot with water up until the bottom of the second knuckle on your index finger. While this water measurement may seem imprecise, give it a try! Adding too much water leads to soggy rice and the knuckle trick has served generations well.
  2. Peel the sweet potato, then cube into small bite-sized pieces. Place the sweet potato cubes on top of the rinsed rice and water. Cover the pot with a lid.
  3. Over low to medium heat, bring the rice to a simmer and then tilt the lid so that it is not tightly covering the rice, but instead slightly offset with a thin gap to allow steam to escape. This will prevent the rice from boiling over.
  4. Allow the rice to steam for 20-35 minutes, depending on the depth of your pot. The rice is finished when the sweet potato on top is fork tender and the rice looks like individual clear grains and does not look wet.
  5. Serve the rice with the sweet potato on top or stir the cubes through.
