This is one of my favorite easy healthy dinner recipes that I love to make when I'm in the mood for a tropical end-of-summer meal. These organic kiwi berries add such a delicious sweetness and the sauce adds a spicy kick for a perfect sweet and spicy balance- and makes it a fun family meal!
Ingredients:
Steps:
1. In a medium bowl combine the sesame oil, soy sauce, lime zest and juice, cilantro, red pepper flakes and a pinch of salt . Add the shrimp to the bowl and toss everything together well and set aside to marinate for about 30 minutes.
Preheat the grill, griddle pan or BBQ.
2. Cut the kiwi berries in half. Thread the marinated shrimp alternately with the kiwi berries on the skewers and then brush the remaining marinade over the kiwi berries.
3. Place the skewers on the BBQ or grill pan and cook for just 1 – 2 minutes each side until golden and cooked through. Serve with a simple green Local Roots salad or a mix of roasted Local Roots vegetables.
