Sautéed Spicy Winter Kale & Pork Sausage

I love an easy, one-pan weeknight recipe that is both quick and delicious. This sautéed spicy winter kale & pork sausage dish is hearty on its own or you can pair it with some fresh pasta on the side. Not to mention, you can grate as much parmesan as you want on top! 


1 tablespoon olive oil 

4 oz pork sausage, sliced  

1 red onion, sliced 

3 cloves garlic, minced 

1/2 teaspoon red pepper flakes 

1 bunch winter kale, rinsed

Zest 1 lemon 

1 tablespoon lemon juice 

½ teaspoon kosher salt

Parmesan, grated


  1. Heat a saucepan over medium-high heat and add olive oil. 
  2. Place slices of pork sausage in the pan and cook until browned, about 5-6 minutes. 
  3. Add red onion, garlic and red pepper flakes. Stir and sauté until onions are softened, 4-5 minutes. 

  4. Add winter kale, lemon zest and juice & kosher salt and stir occasionally until the kale is tender, 5-7 minutes. 
  5. Remove from the heat, plate and serve warm with grated parmesan on top.
