Salmon & Broccoli Bowl with Ata Din Din Sauce

Ata Din Din Sauce is a classic West African sauce made from caramelized vegetables that make a deep, sweet flavor perfect with rice and fish. Egunsi Foods uses only locally grown produce in their products, which makes this sauce particularly yummy. 


Ingredients:

½ cup rice

1 Local Roots Wild Alaskan salmon fillet

1 tbsp. Local Roots butter 

1 Local Roots organic garlic clove, peeled and minced

6-10 broccoli florets

2-3 tbsp. Ata Din Din Sauce to taste


Directions:

  1. Rinse and cook rice in 1 cup of water with ⅛ teaspoon salt. Remove from the heat and cover. Gently fluff the rice with a fork before serving.
  2. In a hot pan over medium heat, place salmon seasoned with salt and pepper skin side down, cook for 6-9 minutes depending on the thickness of your fish, then flip the fillet and cook for 2 more minutes.
  3. In a pan over medium-high heat, melt 1 Tablespoon butter, add garlic and broccoli. Stir and cook for 1-2 minutes. Add ½ cup water, ¼ teaspoon salt, cover and cook for about 5 minutes until crisp-tender or about 8-10 minutes until soft.
  4. Assemble the plate: add rice, broccoli, salmon, top everything with Ata Din Din. Enjoy!
