Rutabaga Pancakes

Root vegetable pancakes may sound strange, but the mild, slightly sweet rutabaga makes breakfast delicious the way carrot cake and zucchini bread brighten the day. A hearty and nutritious start to the morning, rutabaga pancakes are a fun way to get in one of your five-a-day.

 

Ingredients

1 Local Roots rutabaga
1 cup Local Roots all purpose flour
2 tsp baking powder
2 tsp Local Roots butter, melted
¼ tsp salt
1 Local Roots egg
¼ cup brown sugar
1 tsp cinnamon
½ tsp vanilla extract
⅛ tsp nutmeg
up to ⅓ cup of water
Local Roots maple syrup, to taste

 

Directions

  1. Prepare the rutabaga by trimming the stem and peeling the tough outer skin. Chop the rutabaga into large cubes, then either roast at 350 for 40-60 minutes or boil for 10-20 minutes until fork tender. Set aside to cool.
  2. When the cooked rutabaga is cooled, blend into a puree in a food processor.
  3. In a medium bowl, stir together 1 cup of flour, 2 tsp baking powder, 2 tsp melted butter, ¼ tsp salt, 1 egg, ¼ cup brown sugar, 1 tsp cinnamon, ½ tsp vanilla extract, and ⅛ tsp nutmeg. 
  4. Add in the rutabaga puree and mix well. If the mixture is thick and not pourable/spreadable, add water in, one generous splash at a time. Avoid making the batter too runny, as you want a batter that spreads smoothly but is thick enough to hold a circular shape on a griddle; not a watery batter that continues to spread until too thin.
  5. Heat a griddle or nonstick pan to medium and use either a ¼ cup or ⅓ cup measure to spoon pancakes onto the surface. Cook for 1-2 minutes, or until there are small bubbles around the edges of the pancake. Flip, then cook for 1-2 minutes more until golden brown and fluffy throughout. Remember, the first pancake is always the least attractive but it is still delicious! Cover the finished pancakes to keep them warm.
  6. Continue making pancakes according to Step 5 until the batter is finished. Serve in pancake stacks and drizzle with maple syrup.
