Roasted Vegetable Bowl

¼ head green cabbage
1 # baby carrots
¼ cup sliced cucumber
¼ cup sliced radish
¼ cup sliced celery
¼ cup sliced red onion
2 tbs scallions
1 tbs sesame seeds
1. Preheat the oven to 400F
2. Wash the carrots and beets, then peel both and cut in half (or quarters for the beets)
3. Season your vegetables with salt and pepper then roast them in the oven until soft, the beets will take more time than the carrots so you can wait to put those in
4. Thinly slice or mandolin the cabbage and then massage the lemon juice into the cabbage along with a pinch of salt
5. Assemble your bowl with a base of cabbage topped with all the vegetables and seeds and enjoy!
