Roasted Sweet Potatoes with Sage

Dried spices and herbs come in handy when you don’t want to dash to your grocery store’s fresh herb section every time you need to make a weeknight dinner. I love this simple and delicious roasted sweet potato recipe because the addition of dried sage is all about comfort with low effort.


Ingredients:

1 pound sweet potatoes, diced into 1/2-inch cubes 

2 tablespoons olive oil 

1 teaspoon dried sage

1 teaspoon kosher salt


Directions: 

  1. Preheat the oven to 425°F. Line a 12x18-inch baking sheet with foil. 
  2. Lay diced sweet potato cubes on the lined baking sheet. Coat evenly with olive oil. 
  3. Sprinkle on dried sage and kosher salt on top. 
  4. Bake for 20-25 minutes in the preheated oven until the potatoes are fork tender, and the skins are nice and crisp.
