Roasted DelicataSquash & Green Bean Salad with Za'tar Dressing

1/4 cup olive oil 

1 tsp tahini 

1 tsp za'tar 

1 half lemon 

Mint, finely chopped

Parsley, finely chopped 

Salt & Pepper, to taste

Delicata Squash, cut into half moons 

Green Beans, chopped 

Directions: Preheat oven to 450 degrees. In a bowl toss squash and green beans with a little olive oil, salt and pepper. While the squash and green beans are roasting, combine the rest of the ingredients in a bowl, season to taste, adding more salt, pepper or za'tar. When squash and green beans are golden brown, remove from oven and toss with za'tar dressing.
