Roasted Breakfast Radishes

For those that don’t love the bitterness of a raw radish, try roasting them for a mellow, slightly sweet side dish. 


1 bunch breakfast radishes, rinsed and leaves cut off
1 tbsp mint, roughly chopped
olive oil
balsamic vinegar



  1. Preheat oven to 400F. 
  2. Toss radishes in olive oil and spread in an even layer on a parchment-lined pan. 
  3. Roast for 30 minutes or until golden brown on the edges, turning at the half-way point
  4. Plate the breakfast radishes, top with mint, and drizzle balsamic vinegar.
