Ricotta Pesto Toast with Asparagus

Sometimes, when hosting an event, or simply a small crowd of friends, it can be hard to know what to cook. What will they eat? Is it messy? Life hacks usually lead us to selecting "finger foods," and this recipe is no different. Easy to handle, and even easier to fall in love with, these toasts can convince even the most analytical guest that they took some serious skills to make. Hint: they didn't. The secret? Great ingredients, simply prepared.




1 cup fresh basil

1 cup parmesan cheese

1 cup Local Roots asparagus, chopped

3 Tbsps. olive oil, plus more

1 Tbsp. lemon zest

Sea salt



1. Toast baguette slices.

2. Slice fresh asparagus with salt and 1 Tbsp. olive oil. Sauté for about 5 minutes until slightly softened.

3. In a blender combine basil, lemon zest  and parm with 2 Tbsps. olive oil. Once blended, mix with ricotta.

4. On toasted baguette, add 1 spoonful of ricotta basil, add asparagus, and drizzle with optional balsamic glaze.
