Rhubarb Galette

Apple Rhubarb Galette
Serves 4

1 puff pastry sheet, softened in the refrigerator for 30 minutes.
4 tbsp. Chinese 5 Spiced Apple Butter
2 rhubarb stalks, cleaned
4 tbsp. brown sugar
1 tbsp. raw sugar
1 egg
Honey, to serve

  1. Heat oven to 375 degrees. Spray a cast iron skillet with non-stick spray.
  2. Add a sheet of puff pastry dough to the pan. Fill the center with apple butter and spread to edges.
  3. Trim rhubarb stalks to fit into pan, and layer on top of apple butter. Sprinkle brown sugar on top.
  4. Fold over edges of dough to fit inside of pan.
  5. Beat egg with a splash of water and brush outside of dough.
  6. Sprinkle raw sugar overtop pastry and bake until golden brown and bubbly, around 25 minutes.
  7. Serve warm with vanilla ice cream and honey.
