Few things in life are so purely satisfying as a well-made omelette. In need of no frills, this simple omelette does not call for a surplus of fillings, nor is it made heavy by copious amounts of cheese. No, this omelette allows the seasonal-favorite, we're talking about ramps, of course, to shine in all its allium glory. Mild and slightly garlicky, local ramps help lift this breakfast classic to the next level, making mealtime feel like the ultimate indulgence when, as is its superpower, the whole thing took three main ingredients and about ten minutes to come together.
Ingredients
1 cup whole Local Roots ramps
3 Tbsps. Local Roots butter
Sea salt
Black pellet
1 Tbsp. olive oil
Directions
1. Cook ramps in olive oil for 2 -3 minutes until slightly wilted.
2. Crack eggs into a small bowl and whisk. Pour into a non-stick pan, add butter, and cook over low heat slowly, until they are even in one layer.
3. Once homogeneous and slightly set, add ramps into the middle of the omelette, and fold.
4. Serve alongside your favorite salad, and enjoy!
