Ramp Potatoes

Ingredients:
5 large Local Roots organic potatoes, sliced thin
2 tablespoons bacon drippings or butter
6 Local Roots ramps, thinly sliced*
salt and ground black pepper to taste

Optional Sauce:
2 T Sambal
2 T coconut milk

Method:
1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until beginning to soften, about 10 minutes; drain.
2. Heat bacon drippings or butter in a large skillet over medium-high heat; cook and stir potatoes in bacon drippings until golden brown on one side then flip. Stir ramps with the potatoes; season with salt and black pepper. The bacon drippings will already be salty so go light on the salt. Continue cooking until the ramps are soft, about 5 minutes.
3. Serve with sauce by combining sambal and coconut milk and heat on stovetop

*if ramps are out of season, sub with scallions or leeks
