Radicchio Fall Salad with Herb Vinaigrette

1 head of Radicchio, sliced thinly
1 other lettuce or cabbage of your choice, sliced thinly 
1 cup of black beans
1/2 cup watermelon radishes, sliced
Goat cheese
For vinaigrette:
1/2 bunch of parsley
3 green onions
1 tbsp balsamic vinegar
1 lemon, juiced
1 garlic clove
1/2 cup of olive oil



1. Make vinaigrette: blend parsley, green onions, balsamic, lemon juice, garlic and oil until smooth.
2. Assemble salad: combine all ingredients in a large bowl. Toss with dressing.
3. Serve with crumbled goat cheese on top.
