Quick & Easy Sautéed Bok Choy

Ingredients

  • 2 tbsp avocado oil
  • 4 ramps
  • 3 spring onions
  • 3-4 stalks bok choy
  • 2 tbsp tamari
  • 1-2 tsp sesame oil
  • Crushed red pepper (optional)

 

Directions

  1. Wash the bok choy thoroughly and remove each of the leaves, making sure to remove any dirt stuck in the bottom of the vegetable. Chop the ramps and spring onions.
  2. Add avocado oil to a large skillet or pot and heat the oil over medium heat until the oil is hot.
  3. Once the oil is hot, add the ramps and spring onion and sauté for 1-2 minutes, until fragrant.
  4. Add the bok choy and tamari and mix until the bok choy is fully coated. Cover and cook for about 2 minutes. Stir again and cover. Cook until the white part of the bok choy is soft (if you want it a bit crunchy, don’t cook for as long!).
  5. When done, mix in the sesame oil and sprinkle on the red pepper flakes (if using).
  6. Enjoy as a gorgeous side to any meal!
