Ingredients
½ lb pizza dough (bought or homemade)
1 purple potato
Fresh cheese
1 onion
A handful of mushrooms
Olive oil
Microgreens or sunflower sprouts
Salt & pepper
Directions
Heat a skillet and add a generous splash of olive oil. Slice the onion and add to the skillet and allow to caramelize over a medium heat. When they have reached a golden color, remove and add another small splash of olive oil.
Wipe the mushrooms clean and slice before adding to the skillet. Season to taste and saute until they are soft and then remove to another small bowl. Preheat the oven to 500F or as hot as it goes.
Roll or stretch the dough into a circle and place it in the skillet. Add a small amount of olive oil to the dough before dotting the fresh cheese.
Thinly slice the potato (a mandolin is best) and place in a circle on the edge of the pizza (add another circle inside of that if you like!)
Then add the caramelized onion, sauteed mushrooms and season with salt and pepper before popping in the oven until the crust is golden brown on the edges.
Top with microgreens and serve
