Potato Gratin

Ingredients

2 russet potatoes 
Gratin sauce:
1 shallot (diced)
5 garlic cloves (2 minced, 3 crushed)
3 tbsp butter
1 and 1/2 cups of heavy cream
2 bay leaves
1 tsp allspice
2 tbsp of all purpose flour
1 tbsp fresh thyme

Salt and black pepper to taste

Directions

1. Preheat the oven at 375. Slice the potatoes in thin circular slices.
2. In saucepan, fry shallots and garlic with butter for 5 minutes or until fragrant. Next add the flour and stir for 2 minutes.
3. Add heavy cream and all spices including salt and pepper. Simmer over medium heat for 15 minutes or until the gratin sauce is nice and thick.
4. Layer the gratin and potatoes in an oven safe dish in layers. Start with gratin sauce followed by potatoes until you finish all vegetables. Finish with sprinkle of Parmesan (optional).
5. Bake for 45 minutes or until edges are golden.
