1. Cook lentils and rice according to instructions on package. While it's cooling, chop your veggies.
2. Make dressing: combine oil, balsamic, minced garlic and salt. Taste and adjust seasoning as needed.
3. Mix lentils, rice, tomatoes, cucumbers, peppers, mint and parsley. Then, toss with dressing until fully coated.
4. Garnish with feta cheese and more herbs. Enjoy!
