Pan-Roasted Turnips and Greens

Yields 2-3 portions

Ingredients
1 Bunch of turnips (about 12 in total), scrubbed and quartered (or cut into sixths, if large), turnip greens, washed and left whole
1 Tbsp. Butter, unsalted
Kosher salt

Procedure
Over medium high heat, add the unsalted butter in a sauté pan. Once it’s melted (not yet brown), add the quartered turnips and cover with a lid. Stir occasionally and cook for 4 minutes. Turnips should brown.

Add the turnip greens, leave the lid off, and cook for an additional 3 minutes, stirring occasionally.

Once the greens are tender and the turnips are also tender and browned, season with salt. Taste and further season, as desired.  Remove from heat and serve.
