Oven-Roasted Collard Green Chips

Chips are a great snack to munch on from time to time, however, if you want a quick, healthy, sustainable and homemade version, you should give collard green chips a try. I personally enjoy making veggie chips with whatever leafy greens are in season, whether that be swiss chard, kale, spinach, or collard greens. Collard greens can get bitter, so I recommend using fresh greens and not baking them for too long. Bake in 10-minute increments, making sure to toss and reposition the chips - you don’t want these to burn. These healthy, easy veggie chips are the perfect snack for binging on your current favorite shows on Netflix.

Ingredients

1 bunch of collard greens

2 tablespoons of olive oil

¼ teaspoon of salt

Directions

  1. Preheat oven to 400 degrees.
  2. Roughly tear or chop collard green leaves away from stems.
  3. Massage olive oil and salt to chopped leaves. Place into the center rack of the oven, bake for 10 minutes, toss, then bake for 10 more minutes.
  4. Remove from oven and let cool for 5-10 minutes before serving.
