Mini Potato Croquettes with Caramelized Apples

This simple potato croquette recipe, inspired by Japanese “korokke,” is a twist on the traditional meat and potato filled patties. The potatoes in your Local Roots Veggie Bundle are the perfect creamy texture for these delightful bites. Add lightly caramelized apples and onions to the filling for richness and a delicate sweetness, and you’ve got yourself a showstopper!  The smaller sized patties provide a perfect ratio of crunchy exterior to soft and fluffy center. Serve these with tonkatsu sauce, a squeeze of lemon, or a splash of vinegar.  

Makes 12 mini croquettes


½ onion, minced

1 farm fresh apple, peeled and minced

2 potatoes, peeled and cut into one inch chunks


2 cups of canola oil (or other high-heat oil)

1 Local Roots pasture raised egg, beaten

1.5 cups panko bread crumbs

½ cup all purpose flour



  1. Lightly caramelize the apples and onions. Heat two tablespoons of oil in a pan and add the apples and onions. 
  2. Cook on medium to low heat, stirring continuously until the mixture is completely browned and homogenous. Splash a tablespoon or two of water on the onion and apple mixture from time to time to prevent burning. When they are finished, all of the liquid should be evaporated. This should take about 20-25 minutes.
  3. Meanwhile, boil potatoes in salted water until soft. Drain the potatoes and make sure no liquid remains. Add the onion and apple mixture. While hot, mash together. 
  4. Salt the mixture to taste.
  5. When the potato mixture is still warm but cool enough to handle, form into 12 patties. 
  6. Wrap the patties in plastic wrap and place in the fridge for at least 30 minutes and up to a day ahead so the flavors can meld together and the patties can cool. 
  7. Once the patties are cool, dip them in flour, beaten egg, and finally panko bread crumbs. 
  8. Heat oil in a pan and fry the patties until golden brown, a couple of minutes on each side. 
  9. Remove from the oil and let drain on a wire rack or paper towels. Enjoy!
