Lebanese Style Sunchokes

2 lb of Local Roots sunchokes (jerusalem artichokes)
1 bunch cilantro
4 garlic cloves
1 lemon
1 tbsp cumin
Sea salt
Black pepper
Olive oil



1. Clean the sunchokes and chop into bite sized cubes. Boil for 5-6 minutes until slightly tender.
2. In a pan, heat 2 tbsp olive oil and add minced garlic. Sauté for 3 minutes, then add the sunchokes. Lower heat and cook for 10 minutes.
3. Season with salt, pepper and cumin. Add chopped cilantro, the juice of 1 lemon and cook for 10 minutes over low heat. Adjust seasoning and enjoy.
