Kohlrabi Fritters

Ingredients

  • 1 large kohlrabi
  • 3 pasture raised eggs
  • 2/3 cup oat flour
  • Sea Salt
  • Avocado oil

Directions

  1. Wash and remove the leaves from the kohlrabi. (Place aside and use in a salad or sautéed). Peel the kohlrabi and chop into large pieces.
  2. Shred the kohlrabi using a grater or a food processor. (Using a food processor with the shredding attachment is much easier, but not as much of a workout). Transfer the kohlrabi onto a dish towel and ring out the excess water.
  3. Crack the two eggs into a large bowl and whisk them. Add in the shredded kohlrabi and the oat flour into the bowl and mix to combine.
  4. Spread the avocado oil onto a baking sheet.
  5. Using your hands, make the kohlrabi mixture into small patties and place onto the backing sheet.
  6. Bake in the oven at 400F for about 20 minutes. Flip and then bake for another 10-15 minutes (depending on how crispy you want the fritters).
  7. Serve with applesauce or avocado!
