Green Garlic Scrambled Eggs

There are few things less comforting than soft scrambled eggs on a bed of steamed rice. We’ve leveled the humble scrambled eggs over rice up with fresh spring green garlic and a dash of soy sauce and sesame oil for umami. We recommend a spoonful of spicy sambal for a fun kick, but that’s totally optional. You could also serve this with crispy breakfast potatoes or on a warm buttermilk biscuit.

Ingredients

2-4 stalks Local Roots green garlic
4 Local Roots eggs
2 tsp sesame oil
2 tsp soy sauce
¼ tsp salt
1 cup rice
½ tbsp Local Roots Hot Chili Sambal (optional)

  

Directions

    1. Steam the rice according to package directions.
    2. When the rice is a few minutes from being ready, begin washing the green garlic. Slice the green garlic thinly on a bias. 
    3. Crack the eggs into a bowl and use chopsticks or a fork to scramble until the whites and yolks are homogenous. 
    4. In a nonstick pan, add 2 tsp sesame oil and the sliced green garlic on medium heat. Saute for 2-3 minutes, until the green garlic begins to brown slightly. Lower the heat to medium-low.
    5. Season the eggs with 2 tsp soy sauce and ¼ tsp salt and scramble again. Add to the pan with the green garlic and allow to set for 20-30 seconds, then use a spatula to gently push the edges in toward the center and use a folding motion. Continue to push and fold the eggs until they are softly set but not brown. Remove from the heat; they will continue to cook in the pan’s residual heat. 
    6. Plate the steamed rice and serve the green garlic scrambled eggs on top. Add a spoonful of spicy sambal if desired. Enjoy!
