Fried green tomatoes are a southern staple. They're commonly enjoyed on their own with a dipping sauce, but can also be eaten in BLT sandwiches or used as the base of an eggs benedict!

1. Cut tomatoes into thick slices (just under 1/2-inch). Season generously with sea salt and let sit for 30 minutes (this draws out the moisture and helps the breading stick better). Dry tomatoes with paper towels.
2. Set up breading station with 3 shallow bowls. In the first, mix flour, garlic powder, onion powder and smoked paprika. In the second, whisk the egg, buttermilk and hot sauce. In the third, combine panko and cornmeal.
3. Dip the tomato slices into the flour mixture, then egg, then breadcrumbs. Let sit while you heat up the oil.
4. In a cast iron skillet or shallow pan, heat oil to 350 degrees. Once hot, carefully add a few tomato slices at a time (do not overcrowd the pan). Fry for 3-5 minutes on each side, until golden brown. Move to a paper-towel lined plate to drain.
5. Sprinkle fried green tomatoes with salt and serve. We recommend serving with an aioli, remoulade or any of your favorite dipping sauces.
