Quarantine might mean extra time to cook, but it also tends to mean having less ingredients to work with, which can make rigid recipes hard to follow. That's why Dan Pelosi (@grossypelosi) created this salad dressing recipe with variability in mind. With this vinaigrette, substitutions allowed not only allowed, they're encouraged! Make this dressing your own and show us what combinations you come up with by tagging us on IG @localrootsnyc! Happy riffing!
Ingredients:
1/3 cup olive oil
1/8 cups white or red vinegar
1 tablespoon spicy mustard
Salt, pepper and red pepper flakes to taste
Directions:
Wash your salad greens and get them nice and dry. Grab a large bowl. At the bottom of the bowl, place oil, vinegar, honey, spicy mustard, salt, pepper, and red pepper flakes. Whisk all ingredients together, taste and adjust to your liking. Some people like a little more savory/vinegary or more sweet/honey. Once you have your dressing set, toss in your mixed greens and coat everything - I like to use my hands here. Finish off with a little more salt, pepper, red pepper on top, and serve.
And of course, every salad ingredient under the sun is welcome here, this is a perfect foundation to a great salad.
