Cucumber, Orange & Fennel Slaw

1 white cucumber, thinly sliced

1 fennel bulb, thinly sliced

1 green onion, thinly slices, 

1/4 cup of olive oil

2 tablespoons of capers

1 orange, cut into segments 

Juice of one orange

Salt & pepper

Directions: Combine all ingredients together. Season with salt and pepper. Add extra orange juice if needed. Serve with your favorite meat like sirloin or roasted chicken.
