Crunchy Collard Green Wraps

Collard Green Wraps

5 collard greens
4 radishes
1 red bell pepper
½ head romaine lettuce
1 avocado
1 small cucumber
2 tbs sesame seeds

  1. Boil a pot of salted water.
  2. Take the stems out of the collard greens and cut in half along the stem then blanch them in the boiling water for about 20-30 seconds until softer and brighter green.
  3. Mash the avocado into a guacamole texture and set aside.
  4. Lay out the collard wrap, long ways, then spread the avocado laying the sliced radishes, bell pepper, romaine and cucumber on top
  5. Sprinkle with sesame seeds then roll it up and enjoy!
