Creamy Truffle Radicchio Salad

Inspired by the truffle salad at Jeju Noodle Bar, this salad is easy to bring together. Topped with curls of Parmesan and freshly cracked black pepper, the creamy truffle dressing brings a richness that plays well with the natural bitterness of radicchio.



1 head of Local Roots radicchio
3 tsp truffle oil
⅓ cup mayonnaise
1 ½ tsp ground whole grain mustard
½ tsp freshly cracked black pepper
¼ tsp salt
¼ tsp garlic powder
Parmesan cheese



    1. Wash the radicchio, then slice into small bite-sized chunks. 
    2. In a small bowl, stir together ⅓ cup of mayonnaise, 1 ½ tsp ground whole grain mustard, ½ tsp freshly cracked black pepper, ¼ tsp salt, ¼ tsp garlic powder, and gradually stir in 3 tsp of truffle oil. Taste for seasoning and add more salt as needed, and add more mustard to increase acidity if the taste is too rich.
    3. Toss the radicchio in the salad dressing until evenly coated. Using a vegetable peeler, carefully use the peeler on the block of Parmesan cheese to create curls of cheese. Top the salad with Parmesan curls and freshly cracked black pepper and enjoy!
