Chinese Stir-Fried Celery

Celery is often the aromatic base of a dish, but this quick stir fry makes it the star. Highlighted by fragrant Chinese chilies and garlic, you will grow to appreciate celery in this delicious, homestyle setting. Growing up, my mom would make this as a side dish and always served it with steaming white rice.

 

Ingredients

½ tbsp neutral oil
1 bunch Local Roots celery
½ tsp dried Chinese chilies
2 cloves garlic
¼ tsp salt

 

Directions

    1. Wash the celery thoroughly, then remove the base stem and roughly chop the remaining stalks and leaves into bite-sized pieces. Mince two cloves of garlic.
    2. Heat a pan to medium-high, then add in ½ tbsp of a neutral oil and the dried Chinese chilies. Fry the chilies for 30 seconds to a minute, until they smell aromatic. Keep them moving and turn off the heat if they begin to smoke.
    3. Add the minced garlic to the chilies and cook for 1-2 minutes on medium-low heat, until the garlic is toasted and fragrant. 
    4. Add the celery to the pan and sprinkle over ¼ tsp of salt while stir-frying the celery until it is coated in the garlic and chilies. 
    5. Pour in a splash of water at a time (up to ⅓ cup, maximum) and continue to cook for 5-10 minutes with the lid on, until the celery reaches your desired consistency. Some prefer it on the crunchier side, and others cooked until tender to the center. Taste for seasoning and add more salt if desired. Serve and enjoy!
