Ingredients
2 cups cashews (soaked for at least 2 hours)
1 cup water
1 tbsp vanilla extract
4 cups chopped cherries
Directions
Add the cashews, water, and vanilla extract to a blender and blend until gorgeously creamy, about 4 minutes.
Transfer to a bowl and mix in the chopped cherries. (You can also blend half of the cherries into the cashew yogurt and save the other half for toppings!).
Store in the refrigerator for up to 1 week.
Take a deep breath and enjoy! (You can add other toppings like coconut shreds, cinnamon, chocolate chips, etc.).
