Cheesy Potato Cakes

3 russet potatoes
2 cloves garlic
¼ red onion
1 cup chopped cremini mushrooms
1 bunch komatsuna (or bok choy)
½ lemon
¼ cup nutritional yeast
Pinch of salt
1 tsp ginger powder
1 tbs ground flax seeds 

  1. Boil a pot of water and preheat the oven to 400F.
  2. Wash and peel potatoes and cube each one into thirds then cook in the boiling water. Cook for about 15-20 minutes or until soft.
  3. Mix the flax seeds together with 3 tbs of water and set aside to make a flax egg.
  4. In a sauté pan, cook the garlic, onion and mushrooms until translucent and fragrant.
  5. In a bowl, mix together the potatoes, garlic powder, salt, mushroom mixture and flax egg.
  6. Mash the mixture until a smooth mashed potato like consistency.
  7. Form small 1 inch cakes and coat them in the nutritional yeast for extra cheesy flavor.
  8. Bake in the oven for about 8 minutes per side.
  9. While the cakes are cooking, sauté the komatsuna with lemon juice and serve the cakes on top.
