Pizza is a GREAT way to eat your veggies! Feel free to add all your favorite toppings to this easy to make skillet pizza.
1. Cut zucchini into slices and place onto a tray. Coat with olive oil and season with salt, pepper and dried basil. Bake for 20 minutes.
2. Spread your pizza dough into the cast iron pan. Top with ricotta, mozzarella, zucchini slices and a drizzle of olive oil. Bake for 15 minutes or until golden.
(Note you can also par-bake the dough first for a crispier crust)
3. Once cool, slice pizza and enjoy!
