Cardamom Bread Pudding

Social distancing has led many of us straight into our kitchens. More and more home cooks are undertaking bread baking, and others are rethinking classic holiday recipes (still carb centric, what can we say?) like bread pudding. The comfort we feel inside from warm bread pudding is bolstered from knowing we've avoided food waste and made something delectable with only a few staple ingredients, a key component for recipes during this uncertain period. The citrusy, herbal flavor of the cardamom elevates this known classic to a dessert that is as balanced as it is decadent. So get cooking! This one just might end up replacing Grandma's untouched recipe!


6 slices day-old bread (any bread)

2 Tbsp. grass-fed butter, melted

4 pasture raised, all-natural eggs

2 cups all-natural milk

3/4 cup white sugar

1 tsp. ground cardamom

Pure Maple Syrup (optional)


1. Preheat oven to 350 degrees F (175 degrees C).

2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter over bread. 

3. In a medium mixing bowl, combine eggs, milk, sugar, cardamom. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture. Sprinkle with salt.

4. Bake in the preheated oven for 30 minutes then pour syrup (optional) over bread pudding and put back into oven for another 10 minutes, or until the top springs back when lightly tapped.
