This Italian caprese-inspired vegetarian pasta salad is the perfect Summer dish. It's bright, herbaceous and simple to make. Sfoglini's Spelt Fusilli pasta adds a whole other layer of flavor and nutrition to the dish. Take it up a notch by adding other favorite Summer veggies like grilled zucchini, cucumbers and garlic scapes!
Ingredients
8 oz. Sfoglini Organic Spelt Fusilli Pasta
2 tablespoons mayonnaise
2 tablespoons balsamic vinegar
1/4 cup extra virgin olive oil
8 oz. fresh mozzarella, cut into cubes
1 pint cherry tomatoes, halved
1/4 cup fresh basil, cut into ribbons
flake salt to taste
black pepper to taste
Directions
1. Cook pasta according to directions on box in salted water. Drain and rinse under cold water until completely cooled. Set aside.
2. In a large bowl, whisk together mayonnaise, balsamic vinegar, olive oil, and salt & pepper.
3. Add the pasta, mozzarella, tomatoes and basil to the bowl with dressing. Toss to coat and add seasoning as needed.
4. Drizzle with a bit more olive oil and balsamic and top with some flake salt and black pepper, if desired. Serve and enjoy!
