Braised Golden Beets & Ricotta Honey Toast

Golden beets add a bit of brightness and nutrition to your morning routine. They’re sweeter than their red counterparts and when paired with a bit of honey and ricotta, the combination is perfect for a savory and sweet toast. After braising the beets and letting them cool, this recipe will only take you minutes to make a healthy, filling breakfast. 


Ingredients:

Braised Golden Beets: 

1 bunch golden beets

2 tablespoons olive oil

Assembly:

2 slices of bread

1/2 cup ricotta 

Braised golden beets, sliced into quarters 

2 tablespoons honey 

Maldon sea salt

Fresh mint


Directions:
Braised Golden Beets:

  1. Preheat the oven to 375°F. 
  2. Rinse and scrub beets. Rub the beets with olive oil. 
  3. Set them inside a Dutch oven and fill it with cold water until it halfway submerges the beets. Put the lid on top of the Dutch oven and place in the preheated oven. 
  4. Let beets braise in the oven for 55-60 minutes, or until a paring knife pierces in and out of a beet with no resistance. 
  5. Remove from the oven, drain the water and let the beets cool until you’re able to peel the skin off of them. 
  6. Once the skins are removed, cut into quarters and store in the fridge until ready to make the toast. 

Assembly: 

  1. Toast 2 slices of bread. 
  2. Spread ricotta cheese on bread slices and place a few quarters of the braised golden beets on top.
  3. Garnish with a drizzle of honey, a sprinkle of Maldon sea salt and fresh mint leaves.
  4. Serve immediately.
