Thai noodles are a delight, put simply. They're the perfect vehicle for greens and other aromatic veg, and there's nothing quite like a well-curated stir fry dish. This recipe features Local Roots Bopak Choy which, for those of us not familiar, is like if Bok Choy and Pak Choy had a baby. It's green, nutritious, and full of flavor, making it the perfect addition to this gorgeous plate above.
1 cup Thai noodles, cooked
3 garlic cloves
1 cup Local Roots mushrooms, sliced
2 cups Local Roots Bopak Choy, roughly chopped
2 Tbsps. olive oil
1 Tbsp. hoisin sauce
1 Tbsp. soy sauce
For the homemade peanut sauce:
1 Tbsp. peanut butter
2 Tbsps. soy sauce
1 fresh lemon
1 tsp. sesame oil
1 tsp. Local Roots honey
1. Mix together ingredients for peanut sauce and set aside. Sauté garlic until fragrant with olive oil on medium heat.
2. Next, add mushroom slices and cook for about 6 minutes.
3. Then add Bopak Choy and cook for 5 minutes more.
4. Stir in peanut sauce, add in Thai cooked noodles, and mix well before serving.
Note: You can add a squeeze of fresh lemon juice for a fantastic refreshing taste!
