Black Radish, Orange and Feta Tarts

The black radish is earthy and packed with antioxidants, which is why we love this winter vegetable! We’ve paired thin slices of black radish with juicy segments of orange (also a winter fruit!) atop creamy, salty feta cheese and golden puff pastry. The radish adds the perfect crunch, while its peppery bite is balanced by the rich saltiness of the feta and the sweetness of the orange. These tarts are quick to pull together for a delicious lunch and look impressive enough to serve as canapes at your next party.

Makes 6-8.

Ingredients

2-3 Local Roots black radishes
4 oz feta cheese
4 oz cream cheese
1-2 oranges
1 box puff pastry


 

Directions

  1. Preheat the oven to 375 degrees Fahrenheit. 
  2. Wash the black radishes, then thinly slice into rounds and then half moons. Peel and segment the oranges. 
  3. Add the cream cheese to a bowl, then crumble over the feta cheese. Use a spoon to mix the two together until one cohesive mixture. 
  4. Slice the puff pastry into small rectangles (about ⅛ of a sheet each) and place onto a baking tray.
  5. Spoon the feta cheese mixture onto the puff pastry rectangles and spread evenly, leaving a bit of room at the edge. Bake the puff pastry for 25-30 minutes, until the puff pastry is golden on the bottom and the feta has begun to toast. To help the pastry cook evenly, turn the tray halfway through baking.
  6. Remove the puff pastry from the baking tray, then arrange the slices of radish on top. Layer the segments of orange on top of the radish slices, then serve the tarts.
