It's not everyday we find a new way to make beets shine in all their glory. Today, however, is one of those days. Using just a few simple ingredients and a bit of love, this pesto pasta comes together in the best way possible. Providing brightness, freshness, and all the nutrient density our bodies could want, this dish is sure to enter the weekly rotation, especially during beet season!
Ingredients
3 garlic cloves
1 cup Local Roots beets, cooked
1 cup fresh basil
1 cup parmesan cheese
1/2 lemon
2 Tbsps. olive oil
Sea salt
Noodles (any kind will do!)
Directions
1. Blend all in the ingredients and served with your favorite noodles and enjoy!
