Bright and vibrant, this hummus is a terrific way to stay cool in the summer heat whilst incorporating all those local, delicious veggies into your daily diet. Slice up some crudité with whatever crunchy veg you've got lying around the kitchen, flick on that blender, and throw together this refreshing snack that tastes anything but "thrown together."
Ingredients
1 garlic clove
1 cup cooked Local Roots beets
2 Tbsps. Local Roots tahini
1 lemon, juiced
1 can chickpeas, washed and drained
Sea salt
Directions
1. In a food blender or processor, add all ingredients and blend well for about 5 minutes.
2. Serve with pita bread or Favorite veggies.
