Apple Sesame Financier

The combination of toasted sesame and browned butter in this apple financier make it a delightfully savory and sweet dessert. Thinly sliced apples on top add a delicate textural contrast to the crumb of this buttery cake. This easy dessert is an elegant show-stopper, especially when baked in a tart pan. 

Serves 6-8 

Ingredients


For the cake:

⅞ cup (14 tbsp.) butter

⅓ cup + 2 tbsp. white sesame seeds

⅓ cup all purpose flour

1 cup almond flour

1 ½  cups powdered sugar

6 pasture raised egg whites

Pinch of salt


For the topping:

1-1.5 farm fresh apples, thinly sliced 

1 tbsp. white sesame seeds

1 tbsp. raw sugar

 

Directions

  1. Preheat the oven to 325°F. 
  2. Generously butter a 9” tart pan, or a 12-count muffin tin and set aside.
  3. Brown the butter in a saucepan until nutty and dark brown. Remove from the heat and let cool. 
  4. Toast the sesame seeds in a pan until light brown and fragrant. Whiz them in a spice grinder or high powered blender until powdered.
  5. Sift together the sesame powder, all purpose flour, almond flour, powdered sugar, and salt. 
  6. Whisk in the egg whites to the powder mixture, making sure there are no clumps or pockets of flour. 
  7. Slowly add the browned butter, whisking to fully incorporate. 
  8. Pour the batter into the tart pan and top with apples, followed by a sprinkle of white sesame, and raw sugar. 
  9. Bake in the oven for 1 hour or until golden brown. If using muffin tins, the bake time will be slightly lower, around 35-40 minutes. 
  10. Remove from the oven and let cool completely.
