Air Fryer Eggplant and Carrots with Tahini Sauce

1 eggplant
4 carrots
1 watermelon radish
2 tbsp Georgian spice
1 tbsp garlic powder
1 tbsp onion powder
3 tbsp olive oil
3 tbsp tahini
1 lemon
2 garlic cloves, minced
2 tbsp plain yogurt
1/2 cup water



1. Slice eggplant and carrots into batons. Season with olive oil, Georgian spice, garlic powder, onion powder, salt and pepper to taste.
2. Air fry the veggies for 20 minutes or until crisp.
3. Meanwhile, make the tahini dressing. Combine tahini, lemon juice, garlic, yogurt and water.
4. Plate the tahini sauce with the air fried veggies on top. Garnish with sliced watermelon radish. Season with salt and enjoy!
