Aglio Olio Orzo with Tomatoes and Baby Spinach

One of the most important experiences in my life that shaped my career as a designer and as a person was the year I spent studying abroad in Italy. It’s where I learned to appreciate the beauty of craft and the importance of simplicity. From clothing to food, when you start with quality good quality materials or ingredients don’t have to do too much to make something great.


What you’ll need:


  • Tomatoes
  • Baby Spinach
  • Olive Oil
  • Garlic
  • Orzo
  • Salt and Pepper
  • Grated Parmesan Cheese


What you’ll do:


  • Coarsely chop tomatoes and garlic
  • In a large skillet add olive oil and lightly roast chopped garlic
  • Add tomatoes, baby spinach in with salt and pepper and let soften for a few minutes
  • Toss in al dente cooked orzo and mix together with salt, pepper, and a healthy amount of parmesan cheese
