Kohlrabi, also called German turnip, is in the brassica family of veggies. We love it because all parts of it are edible.
The leaves can be treated like collard greens or kale – they’re a bit tough and a little bitter so you'll want to chop them up really fine and either braise them in a broth or cook them in a lot of butter and bacon.
The kohlrabi root is really crunchy and has a similar texture to a crisp apple. It has a really juicy refreshing flavor, making it perfect for slicing into salads. Use as a crunchy element in salads or you can even roast it or make into chips.
